There’s a special kind of peaceful, contented feeling you get when you wake up on a workday, and remember that you have a yummy, healthy breakfast all ready for you in the fridge. It’s like someone who really cares is looking after you.

And the someone who made you this version must really, really care about you because they want you to feel like you’re getting on a cruise to some tropical paradise instead of the subway to your frigid office (Or you’re still in lockdown, maybe you don’t have to go to your frigid office…but that tropical paradise still sounds amazing).

Oh, and that “someone” who really cares and is looking after you? It’s yourself. If that wasn’t clear.

Overnight oats will stay fresh in the fridge for up to 5 days, so this recipe makes 5 servings. Make it on a Sunday, and you’re covered for the whole workweek.

NOTE: There are rolled oats, there are steel cut oats, and then there’s quick cooking steel cut oats. Most brands make a version, and they’re a revelation; they have the speed and convenience of rolled oats, with the texture of steel cut. They’re the only kind that I buy. That said, you can use either of the other types. See the Sub List at the bottom of the post for details.

EQUIPMENT: Large Container with Lid, Medium Bowl, Spoon, Knife, Zester, 8oz Mason Jars or other vessel for serving

Ingredients
  • 1 cup Quick Cooking Steel Cut Oats
  • 1 cup Unsweetened Coconut Milk
  • 1 cup Milk of your choice
  • 2 tsp Brown Sugar
  • 1 large pinch of Salt
  • 1 20 oz can Pineapple Tidbits
  • 1 Lime
  • 1 cup Granola
  • Shredded Coconut and Sliced Almonds for garnish
Directions
  • Step 1 Whisk oats, coconut milk, your other milk of choice, brown sugar and salt until well mixed. Cover and refrigerate overnight.
  • Step 2 Drain the pineapple, and toss it with the zest and juice of one lime. You can do this the night before when you prep the oats if you choose.
  • Step 3 At breakfast time, layer in an 8 oz container, as you would a parfait, in this order: granola, oats, pineapple, repeat. Sprinkle shredded coconut and sliced almonds over the top.
My favorite type of oatmeal is Quick Cooking Steel Cut. You get the texture of steel cut with the speed and convenience of rolled oats.
