New on the blog! This is the salad that I came up

New on the blog! This is the salad that I came up with for Farmer’s Market Dinner Special last month, and all its ingredients are in season and growing right now…but what strikes me about it now is how seasonless it is. It’s fresh and bright enough to welcome the spring, but the heartiness of the kale and the warm earthiness of the za’atar make it craveable for colder days. And the sunflower shoots from @microbitefarms are rich and buttery and a little bit sweet and they make every salad better.

Harrisonburg! Come cook with me!

I’m partnering with @downtownharrisonburg, @harrisonburgfarmersmarket, and @iexploremore on something I’m calling Farmer’s Market Dinner Special. 🍽️

This going to be a FREE live demo (hosted at Explore More Discovery Museum’s beautiful teaching kitchen!) where I’ll show you how to make a whole meal featuring local ingredients I picked up at the Farmer’s Market THAT DAY.

Then after the demo, we’ll head across the street to the market where we’ll meet some of the farmers who grew the food we just prepared! Armed with a recipe card and grocery list, you’ll be able shop for everything you need to make this meal at home.

I got 48+ ounces of pumpkin purée from that peanut pumpkin (that’s 3+ cans of Libby’s) so there will be lots of pumpkin content coming your way between now and Thanksgiving. And that’s not counting the few cups of cubed pumpkin that I kept aside.

Today’s lunch: this yummy salad of local arugula, goat cheese crumbles, roasted pumpkin, and honey-spiced pumpkin seeds (Yes, I made them…😒…even if I don’t recommend it!) tossed in a simple honey balsamic dressing.

ICYMI…this spring, Rhys and I said goodbye to our city life and moved to Virginia! We’ve got a new house and a new puppy and I’m FINALLY working on a new episode. My new ingredient: BLACKBERRIES! I knew they’d be perfect for my first episode in my new home, as they’re synonymous with high summer in the Shenandoah Valley. I just needed to get my act together before the season ended!

And for another first, I stepped out of my kitchen comfort zone and shot on location! Here in the valley I am surrounded by farms, so I couldn’t pass up the opportunity to get my berries straight from the source, and to learn from someone who grows them. I love this fresh zucchini preparation, but it doesn’t keep in the fridge well. Leftovers are a bit soggy and unattractive, but they make a very attractive (swipe to see) toast! Just mix with shredded cheese, pile on bread, sprinkle with parm, and broil till browned and melty!

I’ve said it before and I’ll say it again: Risotto is easy. I’m talking weeknight-level easy. If you don’t believe me, it’s only because you’ve been fed this lie for so long it’s ingrained. 🍚 😆

I was improvising in the kitchen tonight, excited to use my fresh tomatoes and basil from the farmer’s market. Normally I would just toss them with pasta, but I had some Arborio rice left over and thought I’d experiment with a risotto a la caprese, if you will.

My stroke of genius was to sautée the rice (plus some garlic and onion) with a generous squeeze of tomato paste and a pinch of brown sugar for some base notes of roast-y, caramel-y tomato to balance out the bright acidity of the fresh ones. I think this recipe has promise - just a few tweaks and you’ll see her on the blog!

Goodbye, OG Wingredients set. You were the kitchen that came with my apartment but honestly I wouldn’t have designed you differently. I loved your deep countertops and your deep sink that hid all the dishes I didn’t want to wash. I loved your herringbone backsplash. You were small, but I loved that I could go from fridge to stovetop to workspace in two steps. You were notoriously difficult to light, but together we found our angles.

I know I’ve been pretty quiet recently. There’s been a lot of movin’ and shaking’ in the Wingredients universe — I’ll have a real update for you soon — but I haven’t had much time to cook anything, let alone new things. Forget about creating new content.

So what do I eat when I don’t have time to cook? Pantry Noodles. A 6-ingredient sauce of pantry staples, ANY noodle you’ve got, plus whatever add-ins or garnishes you have in your fridge.
.
I’m a big of a noodle purist on days like these, so I don’t add a lot of extras - but I love a fried egg on top and a sprinkling of scallions. The ultimate weeknight win.

My late-night #fridgespiration dinner of curried cauliflower toast with pickled grapes was SUCH a win, I can’t wait to make it again. It goes from stovetop to oven to stovetop again, which is a little fussy - but the result is a perfectly jammy, perfectly caramelized, perfectly perfect toast topping.

Bring a quarter cup each of vinegar and water, 3 tbsp of sugar, a tsp of salt, and a cinnamon stick to a simmer/gentle boil over medium heat until the sugar and salt are completely dissolved. Pour the liquid over 1/2 a cup of halved grapes.
.
Preheat oven to 400 degrees. In an oven-proof skillet, sauté some thinly sliced onion in olive oil or butter (or both, like I did) until crispy around the edges. Add cauliflower florets and season generously with curry powder. Add salt and pepper to taste. Deglaze with a splash of the pickling liquid, and transfer to the oven. Roast for 10-12 minutes until the cauliflower is nicely browned.

Return to the stovetop. Add a handful of pickled grapes and another splash of pickling liquid and cook over medium low heat for 5 minutes or so until the liquid reduces to a rich jammy consistency.
.
Serve on buttered toast. 😋

I went out and bought more apricots just so I could make this again. It’s one of the best pantry meals I’ve ever made, and it’s exactly what I want to eat on a cold winter morning, full of citrus and warm spices.
